Craig and Adrian

craig’s cheese shop began with a simple parmesan biscuit!

Craig Kleinig created his now famous “parmesan biscuit”, a thin, cheesy snap and sold them through Queen Street Deli while working full-time as a private chef. He kept thinking of a way to start his own business.

Craig grew up on a wheat and sheep farm and loved cooking, even as a young child. When he left school, he trained as a chef and worked in Canberra, Brisbane, Port Douglas and in Sydney.

In 2010, Craig and his friend Adrian Dauney spotted an empty shop in Bondi Junction and realised that this was their chance.

Adrian has been a shining light in peoples dining experience for many years. As the face of Bistro Moncur for 15 years Adrian’s departure to join Craig in the cheese shop left customers and staff bereft. So much so that staff and customers have followed to support and help as loyal customers of their venture. With his remembrance for names, ready laugh and quick wit Adrian brings a smile to all faces whether young or old. As Adrian says “Craig does the food and I do front of house, coffees and service.” Other top flight restaurants Adrian has had long relationships with are the Blue Water Grill and Taylor’s Square Restaurant.

 

The Shop

craig’s cheese shop, at 59 Birrell Street is located a short stroll from busy Bondi Junction down beautiful tree-lined Brisbane Street.

The store has been a butcher’s shop, an icecream shop, a pie shop and even an SP bookie betting shop! Craig and Adrian stripped back the walls to bare brick and installed window seating and outdoor tables. All of the cooking is done in the big, open kitchen out the back.

craig’s cheese shop is so much more than the name suggests. As well as having a fridge stocked with gorgeous seasonal cheeses, there is also yoghurt, cream, butter and charcuterie. The shelves are lined with olive oils, vinegars, Australian olives, honey, organic tomato ketchup, confectionary and of course, taking pride of place Craig’s parmesan and cheddar biscuits.

Of course, craig’s cheese shop serves delicious food for breakfast and lunch. Start the day with a croissant filled with shoulder ham and provolone, french toast with poached rhubarb or a herb omelette. For lunch, you could try a chunky Angus beef pie, braised pork shoulder with green olive pie, a goats cheese tart, salad, soup or a made-to-order sandwich. Perhaps you just want to pop in for a coffee and a freshly baked muffin or bring the children in after school for a milkshake made with our own flavourings and a piece of caramel slice.

craig’s also provides catering to local businesses for lunch, meetings and conferences, picnic baskets for special events and catering for your dinner parties and events.
